Harvest: selective harvest by hand in 20 kg crates from 20 September to 4 October 2025
Maceration time: whole cluster pressing
Fermentation: spontaneous and with its own yeasts in stainless steel tanks
Aging: in stainless steel tanks on full lees until early January (3-4 months) and on the fine lees until bottling
Botteling: First botteling in April 2026
Tasting note
Golden yellow with thick tears; a charming bouquet of fresh apricots, lemongrass and orange peel. On the palate, apricot juice and lemon sorbet, elegant, with a lively acidity, minerality, and delicate extract sweetness. Notes of yellow kiwis, creating a refreshing wine with remarkable tension that stimulates salivation and invites another sip. Fine salty nuances linger long on the finish.
