Harvest: selective harvest by hand in 20 kg crates from the beginning to the end of September
Maceration time: whole cluster pressing
Fermentation: spontaneous fermentation, 70% in stainless steel tanks & 30% in used big oak barrels (2500 l), 2-4 weeks by 20°-22°C
Aging: in stainless steel tanks on fine lees for 5 months

Golden yellow with green reflexes, fruity nose of candied pineapple pieces and ring lots, lemon verbena, a hint of lardo resonates at first; mineral bite with chalky texture, grape jelly and grapefruit, crisp acidity with salty piquancy, rich in substance with elegant extract sweetness, sparkling clean fruit, lots of tension and length, fine tart finish, superb development with air.
