Harvest: selective harvest by hand in 20 kg crates on 5th, 7th and 17th September
Maceration time: 3 weeks
Fermentation: Spontaneous, in wooden fermentation vats at 30° / 3 weeks
Aging: 12 months in small 300 lt. oak casks & 10 months in big oak barrels, before bottling 4 months in stainless steel tanks
Botteling: no fining, unfiltered, with only a small amount of sulphur in August 2021
Tasting note
Bright ruby red hue. Fine fruit scents on the nose with cherry, plum and cranberry, plus a hint of coconut. The palate delivers pronounced fruitiness – the sour cherry and blood orange tones find lovely company with an expression of violets. Wonderfully dry with lively acidity, noble texture, silky tannins and a mineral grip. Cool elegance and juicy drinkability right through the long, fine salty finish. Beautiful Burgundian character.
